How to Make Vegan Black Bean Brownies

Vegan black bean brownies never taste so good, try this healthy black bean brownies recipe,  They are simply delicious and nutritious.  Also, this is a twist on a traditional chocolate brownie.  In addition, you might be skeptical about baking black bean brownies, but don't be; they have a very mild flavor and are so rich, creamy, and full of protein.  Plus, you can easily, boost the flavor of your brownie with essential oils such as Doterra PeppermintWild OrangeSpearmintCinnamon, or even Lavender The sky is the limit.  I only recommend cooking with Doterra (buy here) essential oils because I know they are safe to consume.

 Ingredients

  •  1 (15 ounces) can of black beans, or freshly cooked organic beans, drained and rinsed
  • 2 large organic eggs
  • ¼ cup cocoa powder
  • ⅔ cup honey – local honey if you have it on hand
  • ⅓ cup coconut oil
  • ½ teaspoon aluminum-free baking powder or what you have on hand
  • Pinch of salt
  • 2–4 drops of Peppermint oil
  • ¾ cup chocolate chips, divided

Tip:  Add 1/4 cup chopped walnuts if you'd like

Instructions

  1. Preheat the oven to 350° F.
  2. Pour 1/2 cup of chocolate chips into a large bowl
  3. Place all ingredients in a bowl, except for chocolate chips, use a stand blender or food processor, and blend ingredients until the texture is smooth.
  4. Pour batter into the large bowl that contains the chocolate chips
  5. Pour mixture into greased 8×8-inch pan and top with ¼ cup chocolate chips. (add nuts to the for mixture if you want nuts in brownies)
  6. Bake 30–35 minutes or until the toothpick comes out clean.
  7. Add nuts on top
