 What is the water droplet test? The water droplet test will tell you precisely at what point you should add the oil to your new pan. To get an even and perfect sear on your protein, you have to get the temperature right, leaving your protein with a delicious crust.

Step 1: Let your pan heat over a low-to-medium and let your pan sit for a few minutes

Rub dry the droplets from the pan, lower your heat, and allow the pan to cool for a moment. If you add your oil when the pan is too hot, the oil may smoke, and your food will burn.
    • When your pan is at the perfect temperature – the water droplet will stay intact and dance about the pan similar to a sphere of mercury. At this point, your pan is the ideal temperature. Therefore, wipe your pan clean of water and add it is time to add your oil.

When You Master The Water Droplet Test

 The water droplet test is helpful, but when you are trying to cook, it may feel like it takes forever. When you are comfortable, getting the oil to the correct temperature for cooking proteins is quick and easy to estimate. First, add your oil and observe it. When you notice the oil is glistening and lightly ripples across the surface of the bottom of the pan, it is the correct temperature. Plus, this should occur pretty fast. Although, if the pan is too hot, you will notice the oil will begin to smoke.
