Pro Tip:  Soaking pinto beans will speed up the cooking time.  For example, you can soak your beans overnight or just for several hours.  Before cooking the dried pinto beans be sure to remove any tiny rocks or debris in them. Finally, to make Borracho beans (drunk beans) add a 12 oz. dark beer to your beans.

How to cook pinto beans


  • 16 Ounces or (6 Cups) of pinto beans (BUY HERE)
  • 1 green bell pepper, diced (med or large what you have on hand)
  • 1 TBSP ground cumin  (BUY HERE)
  • 3 thick-cut slices of bacon, cut into thirds (you can add them raw or fry them some first.  I prefer to fry them before adding to my beans) or salt pork 
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 3 TBSP Kosher salt (You can start with 2 TBSP and taste your beans and more salt if desired) (BUY HERE)
  • 1 medium tomato, diced
  • Ground black pepper
  • Flour or Corn Starch

Charro Beans


  1. Clean beans, remove any rocks or debris, as needed
  2. Rinse beans with cold water
  3. Place the beans in a Stockpot with Cover, Slow Cooker Set or crock pot. 
  4. Cover the beans with water (leave about 6 inches of water from the top of your beans to the top of the water line) and add cumin, bacon, garlic, onion, bell pepper, tomato and salt and pepper. 
  5. Bring to a boil, then reduce the heat to low and cook until the beans are falling tender
  6. *****If you soak your beans over nigh, they will be tender after 2 to 3 1/2 hours. The rest of the steps are still the same but skip to #8
  7. If you don't soak your beans over night, they will be tender after about 5 hours.  At this point you can taste your bean broth to see if they need more salt, if you like a little spice you can add paprika or something similar
  8. I like to cook my beans until they are almost falling apart, once your beans are tender (after 5 hours or so) 
  9. Start with 2 TBSP of flour or corn starch dissolve in warm water and add to your beans.  Mix thoroughly.  This will thicken your bean broth. You can adjust accordingly.
  10. Cook your beans for another 1 hour or longer if you wish, the longer you cook them the better they are.
  11. Stir your beans periodically so they don't stick to the bottom of your pan

Pro Tip: 

  1.  If your beans start to dry out, add more water but be sure it is hot water
  2. Use a stainless steal pan to cook your beans
