How Good Are Made-In Knives

Made-In knives are crafted in Thiers, France, the world's knife capital.  These knives, which celebrity chef, Top Chef-winner, and restaurateur Brooke Williamson described to the brand as having the “perfect weight and the perfect level of comfort in the handle,” are stunning, and the knife set boasts fully forged and full tang.

In contrast, many less expensive knife sets are frequently stamped knives.  Stamped knives are made from different pieces of metal and then cut to fit the shape of the knife before they are sharpened and then provided with their handles.  Stamped knives are usually less durable and sturdy than forged blades.  When in the market for a knife set, look for a fully forged, full tang design for the best knife possible.

A fully forged knife is constructed from 1 whole piece of metal, and in this case, a kind of stainless steel called X50CrMoV15.  What full tang refers to is the general knife design and construction quality.  A full tang is a knife with a stainless steel design that runs from one end to the end of the handle.  Some blades are made half tang or pick tang with a considerably skinnier shape at the handle.

While half tang or pick tang knives are often relatively stable, a full tang knife provides excellent stability throughout the handle and the cutting profile, from one end of the blade to the other.  Full tang knives usually have a better even balance and a sturdier feel in your hand, and they also typically have heavier than half tang knives, which is sometimes good.

Finally, knives I like! The Chef’s knife is large with a nice curve that works well for prepping. Great balance. Cuts like butter through tough meat. The Nakiri is also great for prep – I look forward to trying it out for making/cutting sushi. I love the red color – looks sort of “high end” like a show piece.
